NessAlla Kombucha

One of the nation's first craft kombucha breweries opened in Madison in 2008. Today, you can find beverages from NessAlla Kombucha in local grocery stores, restaurants, cafes and bars. Kombucha is fermented tea that is tangy and fizzy with a sweet balance.

Owners Vanessa Tortolano and Alla Shapiro, both certified herbalists, operate the business with a common vision of helping the community gain a deeper knowledge of health and well-being. Using organic and fair trade ingredients in their kombucha is one way to promote this idea—supporting renewable energy is another way.

NessAlla Kombucha purchases 100% green power for its facility from MGE. This prevents about 75 tons of carbon dioxide emissions and eliminates the need for nearly 51,000 pounds of coal annually.

"We are proud to be part of a leading effort like Green Power Tomorrow," Tortolano said. "This is an important step to show others we need to act now to ensure we have the clean future we all want."

"I believe if more people and businesses step up to support green energy, it will help keep the cost down and make it more accessible," she added.

The company takes other steps to protect the environment:
• Brewing tea with energy-saving, on-demand boilers.
• Composting waste through community partnerships.
• Participating in a returnable growler (kombucha container) program.
• Using natural-based, nontoxic ink for screen printing.

"It's very important to us to do what we can to help the environment," Tortolano said. "It's a responsibility we all share."
